Rocio’s Pico de Gallo

Ingredients
  • 8 Hothouse Tomatoes, cubed
  • 2 Jalapeno peppers, seeded (if you like it spicy, leave seeds on)
  • 1 Spanish Onion, chopped
  • 2 Avocados, pitted and cubed
  • 2 cups fresh Cilantro, chopped
  • Juice of 2 fresh limes
  • 1 tbsp Salt

Instructions

Chop all ingredients, mix well. Let is rest for at least 30 minutes so flavors combine well. Enjoy over grilled chicken, or your favorite steak (skirt steak is great for fajitas).

Make it fruity: Replace the avocado with mango, peach or pineapple.
