Alligator

The best of the Bayou! Alligator is one of the most unique meats available as it is very high in protein while remaining very lean. It is a white meat packing very mild flavor and firm texture. The best comparison for its texture would be dark meat chicken, while the flavor has a slight fishiness to it.

How to Cook Alligator

Most often, alligator meat is best prepared in the oven, pan-seared on the stovetop, or fried. The Cajun professionals tend to keep their oven-roasted gator quite simple. Toss it in the oven at 350°F for 30 minutes with some garlic butter and lemon juice. These flavors pair wonderfully with the meat, but also allow it to show off all of its own rich flavors. When cooking gator, be sure your meat has reached a minimum of 160°F before eating. Same as when cooking chicken, alligator should be white all the way through when finished cooking. If you see any pink color in the middle, be sure to return the meat to your heat source and finish cooking through.
