The best of the Bayou: farm raised American alligator. Alligator is one of the most unique meats available and is very high in protein while remaining very lean.


Farm-raised Bison are now widely available for public consumption. Bison meat is leaner than beef and prized for its rich flavor. Find it in our exotic case!


Wild caught Atlantic Squid, cleaned and gutted, ready for the frier! A staple in many cultures, calamari are traditionally enjoyed fried but can also be sautéed.

Capons are castrated male chickens that have been raised on a strictly fatty/dairy based diet. Great for roasting and serving a group.

Cornish Hen

Smaller than a chicken, typically weighing between 1-2 lbs, these little Cornish Hen are great for small roasts.


Duck is known for its rich dark meat and thick fatty skin. It is best prepared grilled, roasted or otherwise cooked so that the meat remains moist.

Elk meat is prized for being high in protein and its rich gamey flavor. It’s low in cholesterol and fat while also being a good source of iron and zinc.


Goose is all dark meat, with an intense flavor that is more often compared to beef than chicken.


Ostrich meat is incredibly lean while still maintaining the richness and flavor of red meat. It can be a substitute for beef and is great grilled, roasted or pan seared.
