Goose is a poultry that is considered all dark meat. It has an intense flavor that is more often compared to beef than chicken. The texture is dense and tender, with a good amount of fat for a wonderful mouthful in every bite. The legs tend to have more fat content, while the breasts will have less. Compared to other poultry, there is none more flavorful than this.

They typically weigh anywhere between 12-14 pounds. We recommend accounting for about 1-1.5 pounds of raw meat per person. In fact, these birds are a fun way to switch up the roasts at your holiday gatherings. No better way to feast like royalty!
