Ostrich meat

Ostrich

Ostrich is incredibly lean poultry that also packs the richness and flavor of red meat. The USDA defines ostrich as poultry, but it truly looks and tastes almost exactly like beef. This makes it a near perfect replacement for beef in most recipes. The reason for the redness of the meat despite being poultry is due to the protein myoglobin. Once exposed to oxygen, myoglobin causes the meat to turn a dark red rather than the traditional color of poultry.

When we say Ostrich is lean, we really mean it. Steaks usually sit at about 95% lean, while the filet in particular sits at about 98% lean. This can be a great option for those looking to lose weight without sacrificing the wonderful flavor of beef.
