Bone-In Pork Chop
Our Bone-In Pork Chops come from a lineage of both Berkshire and Heritage breeds. The Berkshire breed is what gives these chops their incredibly dense marbling. That marbling creates a one-of-a-kind tenderness and rich flavor profile. We guarantee you have never experienced a pork chop quite like these. This cut is also available as a Bone-In Pork Rib Roast. Available with anywhere from 2-7 bones, we are always happy to remove and tie on the bones for easier slicing and serving. This roast is perfect for serving any sized party for holidays or special occasions. Take this roast’s presentation to the next level by requesting it made as a crown roast. Our butchers string together 10 or more rib chops to create an elegant circular crown roast. Once you give this pork a try, you won’t want pork chops from anywhere else ever again!
A Bone-In Pork Chop comes from the rib section of the pork loin. Each chop has a bone running through it – similar to a beef bone-in ribeye – that packs tons of added flavor. You can take a couple different paths to cooking this cut of pork. Our top recommendation: grilling. This method will give you a wonder crust on the outside with a juicy tender inside. However, due to their dense marbling, cook these chops on medium / medium-high heat and be ready for flare ups. Alternatively, you can always cook these chops in your kitchen as well. Whether you choose to pan sear beforehand or at the end to get a good crust, you can do the majority of cooking in the oven. No matter what method you choose, look for a final internal temperature of 145°F before removing from the heat source.
