Chicken Parmesan

Made by our Chefs, enjoy this classic Chicken Parmesan with breaded chicken cutlets, covered in mozzarella cheese and marinara sauce. Bring it home for a quick weekday dinner on busy school nights; the whole family will love it! Or stop in during your lunch break; no doubt you’ll have the best lunch at the office!

Chicken Parm finds its roots from a very similar dish – Eggplant Parmesan. This dish was known as a “la cucina povera” dish, meaning “from the kitchen of the poor”. Eggplant was often grown locally or in one’s own yard. Then the rest of the ingredients were commonly found in any person’s kitchen, such as basil and tomatoes, making this dish accessible to all.

Rather than being breaded and fried, eggplant parmesan was traditionally baked with olive oil. The switch over to chicken cutlets, breading, and frying came from none other than…. the United States. In the early 20th century when loads of Italian immigrants came over to the US, eggplant was much harder to find. Therefore, due to higher wages in the US, Italian families could better afford chicken and decided to implement it into this traditional dish!
