Lamb Shoulder

A missed cut of lamb that is full of flavor. As one would imagine, this cut comes from the front shoulder. Its higher fat content creates a rich flavor – richer than the more popular leg of lamb cut. Because of this higher fat content, lamb shoulder retains its juiciness after being cooked. The fat also helps the shoulder to be a more forgiving cut if overcooked. While lamb shoulder isn’t always in our meat case, we are more than happy to order it for you – just give us a phone call!

Due to the size of this cut, it is best prepared when roasted, braised, or barbecued slowly at a low heat level. As mentioned above, this cut remains incredibly juicy and flavorful even when cooked over a long period of time. Mix things up at your gatherings by serving this roast for holidays or any special events with family and friends. Oh, and don’t worry about any leftovers. Lamb Shoulder is a fun cut to shred and use in tacos or homemade gyros!
