Oxtail

Oxtail is a popular delicacy that is cut from a cow’s tail. It is a gelatin rich cut due to the connective tissue within the tail of cows. You will most often find it sliced into thick chunks.

Due to its connective tissue makeup, oxtail needs to slow cooked, either braised or roasted. When cooked low and slow in such ways, the meat will literally fall off of the bone. This extremely tender and flavorful final product is what makes the cut such a delicacy. It is commonly used in dishes of many countries throughout the world, such as Jamaica.
