Pork Shoulder

Also known as Pork Butt or Boston Butt, this cut of pork comes from the front shoulder of the hog. While it is available in both boneless and bone-in, at Avon Prime Meats we most often carry boneless. Size-wise, this cut can be up to 10 pounds untrimmed, or broken down to be any desired smaller weight. Our butchers are always happy to slice and trim to your exact preferences. In general, this is a very fatty and well-marbled cut of pork. There is no shortage of flavor or juiciness here. The meat itself is densely laced with flavorful marbling, while the top is coated in a thick fat cap.

In order to help all this fat marbling break down, Pork Shoulder is best cooked low and slow. The best methods of cooking this cut are smoking, slow roasting (in the oven or crock pot), or braising. No matter which you choose, the important detail is to cook at a low temperature for a long period of time. Two of the most popular uses for Pork Shoulder are pulled pork and carnitas. Both recipes end with shredded pork, and to create such a tender final product, the low & slow cooking methods are required. While pork is safe to eat at 145°F, for recipes such as these you will want a final internal temperature close to 200°F. This will ensure the meat is tender and shreddable.
