It is laced with plenty of marbling to add wonderful flavor to any dish. In our meat case at the store you will see this cut rolled up, weighing anywhere from 1 to 1.5 pounds. Time for a butcher’s lesson! Skirt Steak is often confused with Flank Steak and Hanger Steak. So, here are the major differences to help you know what differentiates the 3 cuts. Firstly, you can immediately tell the difference between this cut and flank steak when looking at their fat content. Despite both being flat, flank is a very lean cut. Hanger though, like skirt, is also a well marbled cut. To differentiate these two, remember that skirt is as flat as it gets, while hanger has a rounder shape.
