Firstly, you can immediately tell the difference between this cut and flank steak when looking at their fat content. Despite both being flat, flank is a very lean cut. Hanger though, like skirt, is also a well marbled cut. To differentiate these two, remember that skirt is as flat as it gets, while hanger has a rounder shape.
