Wagyu Beef

Wagyu Beef is the finest and most special type of beef that planet Earth has to offer. This beef is a revered breed of cattle from Japan is known for its elevated, rich, buttery flavor and spectacular, web-like marbling. The term “wagyu” is actually the collective name given to the four principle breeds of Japanese cattle. In fact, in the Japanese language, “wa” means Japanese and “gyu” means cow. The development of the incredible intramuscular fat marbling creates a truly unrivaled eating experience. In the USA our beef is graded in terms such as prime, choice, select, (etc.), but Wagyu does it differently. Firstly is the yield grade of the beef, shown either as A, B, or C, with A being the best. Secondly, the quality is graded on a scale of 1-5, with 5 being the best. Therefore, the best wagyu beef you can find is labeled A5 Wagyu.

What Do We Carry?

Here at Avon Prime Meats, we bring in Wagyu Beef for special occasions and holidays. Most often you will find us carrying A5 Wagyu Ribeye, Strip, or Tenderloin – with ribeye being our most common. Due to A5 Wagyu being as densely marbled as any beef can get, the meat cooks quite quickly. Therefore, the slicing and cooking process is very particular. Our butcher’s cut this beef very thinly. Ribeye and strip will be cut close to 1/2″ thick, while filets closer to 1″. This thinness permits the steaks to be cooked hot and fast. We always recommend using a cast iron skillet (or any pan) for this. It will provide a beautiful crust with a rich, melt-in-your-mouth inside.
