The history of crab cakes may not be what you would expect. The dish likely originates with the indigenous Native Americans in the Chesapeake region on the East Coast. It is potentially the first indigenous dish that was adopted by settlers in that region. All the way up to the 1920’s, Maryland was primarily the best source for crab meat in the United States. Little by little, more ports across the eastern seaboard began to join in sourcing it as well.
