Season short ribs with salt liberally, and toss lightly in flour. Brown all sides of the short ribs in a hot pan with olive oil. When the short ribs are browned on all sides, remove and deglaze the pan with 1.5 cups of red wine.

Once the wine comes to a simmer, add in a can of crushed tomatoes, cubed potato, your carrot, shallot, mushroom mixture, and the short ribs to the pan (preferably Dutch oven). Season again with salt and pepper. Cover and place in the oven at 350° for about 2.5 or 3 hours. After this time, the short ribs should be fall apart tender and the vegetables perfectly cooked!
