Serves
2 people per cowboy steak
Instructions

We recommend the reverse sear method for a thick cut steak like this one:

-Rub the steak down with a little olive oil and season generously with your favorite seasoning. Here we used “Spicewalla” Cowboy Steak rub.

-Place in the oven at 250-275° on a wire rack. Monitor the temperature until it reaches about 115° internal.

-Remove the steak from the oven and sear both sides in a pan on high heat for about 2 minutes per side, or until the internal temperature reaches between 125-130° for medium rare.

-Allow the steak to rest for 10 minutes, slice, and enjoy! –> This steak was topped with a simple garlic, parsley compound butter.
